Whenever I feel like we need a dose of fibre, because let’s face it we’re adults – I turn to this salad. Our digestive system isn’t what it was when we were 20 right? I keep all the ingredients in my cupboard just in case I need to throw this salad together at the last minute! It works out great and a great way to keep up your fibre intake.

Yield: Feeds 4 Ingredients:
2 cans tuna (large) 2 cans chickpea 1 bunch parsely 1 red onion 1 lemon salt and pepper to taste 2 tablespoons olive oil
Instructions:

- Dice the onions and the parsely well (small enough for the salad)
- Place the two cans of chickpea and tuna into a bowl.
- Mix the tuna and the chickpeas (be careful not to squish the peas)
- Add the onion and parsely mixture on top.
- Add salt, pepper and lemon on top of the salad and mix.
- Enjoy!
